Summer Chicken

We've discovered a new marinade.  Made in Tasmania by the team who produce Island Berries Pannacottas and Summerberry Puddings comes a Morroccan Orange Paste from Saltminers. A beautiful, fragrant paste, with spice but no heat - even the kids love it.

Baste chicken thigh fillets in the marinade for up to 30 minutes. Cook over an oiled BBQ flat plate or grill until chicken is just cooked through. Serve with a simple green salad and new potatoes. We choose thigh fillets because they tend to stay moister than breast fillets when barbecued. Lamb fillets would be a great substitute.

We have also used the paste to stir fry with sliced chicken breast and green prawns and added a pinch of raw sugar and a splash of water to provide an amazing sauce. Stir fry vegetables in a separate pan to prevent the sauce from overwhelming your final dish.

And of course don't overlook the pannacottas or summer berry puddings as a very simple but very elegant end to the meal...
